Eggplant Parmigiana (Parmigiana di Melanzane)

Ingredients:

  • 3 large eggplants (aubergines)
  • 3 cups tomato sauce (homemade or store-bought)
  • 1 lb (450g) mozzarella cheese, sliced or shredded
  • 1 cup grated Parmesan cheese
  • 1/2 cup fresh basil leaves, chopped
  • 1 cup all-purpose flour
  • 3 large eggs, beaten
  • 1 cup breadcrumbs
  • Olive oil for frying
  • Salt and black pepper to taste

Instructions:

  1. Prepare the Eggplants:
    • Slice the eggplants into 1/4-inch thick rounds.
    • Sprinkle salt on both sides of the slices and let them sit for 30 minutes to release excess moisture. Pat them dry with a paper towel.
  2. Fry the Eggplants:
    • Heat olive oil in a large frying pan over medium heat.
    • Dredge each eggplant slice in flour, dip it into the beaten eggs, and then coat it with breadcrumbs.
    • Fry the eggplant slices in batches until golden brown on both sides, about 3 minutes per side. Drain on paper towels to remove excess oil.
  3. Assemble the Parmigiana:
    • Preheat the oven to 375°F (190°C).
    • In a large baking dish, spread a thin layer of tomato sauce on the bottom.
    • Add a layer of fried eggplant slices, then spoon some tomato sauce over the eggplants, sprinkle with chopped basil, and top with slices of mozzarella and a sprinkle of grated Parmesan.
    • Repeat the layering process until all ingredients are used, finishing with a layer of tomato sauce and a generous amount of Parmesan cheese.
  4. Bake the Dish:
    • Cover the dish with foil and bake for 30 minutes. Then, remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and golden brown.
  5. Serve:
    • Let the eggplant parmigiana cool for about 10 minutes before serving.
    • Garnish with fresh basil and serve with crusty Italian bread or a side salad.

Tips:

  • Baking Option: If you prefer a lighter version, you can bake the eggplant slices instead of frying them. Just drizzle them with olive oil and bake at 400°F (200°C) for about 15 minutes, flipping halfway through.
  • Tomato Sauce: For a homemade sauce, simply simmer crushed tomatoes with garlic, olive oil, and basil for about 30 minutes.
